Jackfruit Mint Smoothie

Ingredients:

  • 3 frozen jackfruit chunks
  • 3/4 cup coconut milk
  • 1/2 cup pineapple juice
  • 5 mint leaves
  • 1 teaspoon fresh grated ginger

Directions:  Blend all together until smooth and enjoy.

BBQ Jackfruit Stuffed in Sweet Potatoes


Ingredients:

  • 2- 20 ounces cans young jackfruit in brine, drained and rinsed
  • 1 tablespoon brown sugar
  • 1 teaspoon Mexican oregano
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 1 cup vegan-friendly BBQ sauce
  • 4 large sweet potatoes, scrubbed and cleaned

 Avocado Crema:

  • 1 large avocado
  • Juice of 1 lime
  • Salt to taste
  • 1 handful chopped cilantro (optional)
  • 2-4 tablespoons water

 Directions:
  1. In a large mixing bowl mix the drained jackfruit with all the spices (brown sugar to chili powder), stir to evenly coat the jackfruit with all the spices. Add the jackfruit to the slow cooker. Pour the BBQ sauce over the jackfruit and stir.
  2. Cook on low heat for 5 hours.
  3. After 5 hours, shred the jackfruit with a fork. Cook for an additional hour.
  4. Preheat the oven to 375 degree. Poke the sweet potatoes with a fork then wrap them with an aluminum foil. Place on a cookie sheet. Bake until tender, 40-60 minutes or longer depending on the size.
  5. While the jackfruit and sweet potatoes are being cooked, make the avocado crema; in a blender or food processor, add the avocado, lime juice, cilantro if using, salt to taste and water. Blend until smooth. Add any additional water as needed. Taste for seasonings.
  6. Serve the cooked jackfruit over the baked sweet potatoes and serve with the avocado crema.

Crispy Jackfruit Chips

Ingredients:

  • Fully matured but only half-ripe jackfruits, harvest the flesh, remove the seeds and sliced to your taste.
  • Turmeric powder
  • Vegetable Oil

Directions: Sprinkle sliced jackfruit with turmeric powder then deep fried it until slightly brown.
