Purwakarta Beef Satay (Sate Maranggi) Recipe

Sate maranggi is one of the most famous satay in Purwakarta, West Java, Indonesia. Even both Purwakarta and Cianjur claims to be the city where this satay originated, but Purwakarta seems to be winning the competition.

The ingredients for the satay are pretty much identical to common beef satay. But still, the meat is so tender and the seasonings are absorbed, making it perfectly delicious. Another special thing with this satay lies in the sambal that goes with it; spicy, fresh, sweet, sour, and it goes really well with the satay.

  • 600 gram beef tenderloin, diced into ½ inch
  • 3 tablespoons sweet soy sauce
  • 30 bamboo skewers

Grind the following into spice paste:
  • 12 shallots
  • 8 cloves garlic
  • 1 ½ tablespoons coriander seeds
  • 2 tablespoons tamarind solution (½ tablespoon tamarind soaked in 2 tablespoons warm water)
  • 1 ½ teaspoons salt to taste
  • 100 gram palm sugar

Chili salsa (mix the following together):
  • 5 bird’s eye chilies, thinly sliced
  • 1 tomato, diced
  • 2 shallots, thinly sliced
  • 1 tablespoon vinegar
  • 5 tablespoons sweet soy sauce

  1. In a mixing bowl, mix beef, sweet soy sauce, and spice paste. Cover with plastic wrap and let it rest in the fridge for at least 2 hours or overnight.
  2. Skewer the marinated beef with bamboo skewers.
  3. Grill each side until cooked and slightly charred, baste with marinating sauce as needed.
  4. Enjoy the satay with chili salsa and rice cake.
