3 Easy Fish Dinner Recipes

Catfish Fry


  • 6 (3/4 to 1 pound) catfish fillets
  • 1 cup buttermilk
  • 1 tablespoon black pepper
  • 1 1/2 teaspoons salt
  • 2 cups (about 8 2/3 oz.) cornmeal mix
  • 1 1/2 to 2 qt. cooking oil

  1. Cut shallow diagonal slices 2 inches apart into thickest portion of both sides of fillets. Place fillets in a large shallow dish.
  2. Stir together buttermilk, pepper, and salt; pour over fillets. Cover and chill 8 to 24 hours, turning fillets occasionally.
  3. Remove fillets from marinade; discard marinade. Dredge fillets in cornmeal mix, pressing to adhere.
  4. Pour cooking oil to a depth of 1 1/2 inches in a large deep skillet; heat over medium-high to 370°F. Fry fish, 2 fillets at a time, until golden, about 6 minutes. Drain and serve.

Steamed Salmon in Vegan Rice Bowl

  • 200 gram brown rice, cooked
  • 100 gram green beans
  • 200 gram pak choi, chopped into chunky pieces
  • 4x100 gram salmon fillets
  • 4 tablespoons sweet soy sauce
  • Juice of 3 limes
  • 2 tablespoons sambal ulek (chopped chili in a jar) or 1 red chili, deseeded and chopped
  • 1 tablespoon rice vinegar
  • 1 tablespoon golden caster sugar
  • 4 spring onions, finely chopped
  • 4 tablespoons mixed seeds
  • Pickled ginger, chopped (optional)

  1. In a small bowl, mix together the dressing ingredients, set aside.
  2. Put the vegetables and fish in a large steamer in two layers. Steam the fish for 5-8 minutes and the vegetables for 4-5 minutes until cooked through.
  3. Spoon cooked rice into bowls and top with steamed fish and vegetable. Pour some dressing over and top with spring onions, mixed seeds and pickled ginger.

Pan-Seared Trout with Italian-Style Salsa

  • 6 ounces trout fillets
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 4 tablespoons olive oil
  • Italian-Style Salsa
Garnish: lemon slices

  1. Sprinkle fillets with salt and pepper.
  2. Cook 3 fillets in 2 tablespoons hot oil in a large nonstick skillet over medium high heat for 1 to 2 minutes on each side or until fish flakes with a fork. Repeat with remaining fillets and oil.
  3. Top fish with salsa. Garnish and serve immediately.
Note: You can substitute catfish, salmon, tuna, or tilapia for trout.
