Broiled Scallops

Ingredients:

  • 1 1/2 pounds bay scallops
  • 1 tablespoon garlic salt
  • 2 tablespoons butter, melted
  • 2 tablespoons lemon juice

Directions:

  1. Turn broiler on.
  2. Rinse scallop and place in a shallow baking pan. Sprinkle with garlic salt, melted butter or margarine and lemon juice.
  3. Broil 6 to 8 minutes or until scallops start to turn golden. Remove from oven and serve with extra melted butter or margarine on the side for dipping.


Spicy Crab Pasta

Ingredients:

  • 1 (16 ounce) package dry  farfalle (bow tie) pasta
  • 1/2 cup butter
  • 1 (6 ounce) can crabmeat, drained and flaked
  • 1 (14.5 ounce) can peeled and diced tomatoes, drained
  • 1 1/2 tablespoons red pepper flakes
  • 1 tablespoon garlic salt
  • Salt and pepper to taste

Directions:
  1. Boil lightly salted water in a large pot. Add farfalle pasta, cook for 8 to 10 minutes, until al dente, and drain.
  2. Melt the butter in a separate pot. Mix in crabmeat and tomatoes. Season with red pepper, garlic salt, salt, and pepper. Cook and stir for 10 minutes. Toss with cooked pasta to serve.

Calamari Fra Diavolo

Ingredients:
  • 3 tablespoons olive oil
  • 1 yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 can (800 gram) whole peeled tomatoes
  • 1/2 cup (125 ml) fish broth or bottled clam juice
  • 1/2 cup (125 ml) full-bodied red wine
  • 3 tablespoons chopped fresh oregano
  • 1/2 teaspoon red pepper flakes
  • 1.25 kg cleaned squid, bodies cut into 1/2-inch (12-mm) rings and tentacles coarsely chopped
  • 1/3 cup (15 gram) chopped fresh flat-leaf parsley
  • Salt and freshly ground pepper
Directions:
  1. In a small pot over medium heat, warm the olive oil. Add onion and sauté until tender and golden, about 5 minutes. Add garlic and sauté for 30 seconds. Stir in the tomatoes with their juices, breaking them up with the back of a spoon. Add the broth, wine, 2 tablespoons oregano and red pepper flakes. Reduce the heat to medium-low and cook, uncovered, until the sauce is lightly thickened and the flavors have blended, about 15 to 20 minutes.
  2. Add the squid, cover, reduce the heat to low and cook until very tender, about 25 to 30 minutes. Stir in the remaining 1 tablespoon oregano and the parsley. Season with salt and pepper and serve immediately.
