Roast Pickled Cucumber and Pork Sandwich Recipes

Roast Pork and Pickled Cucumber Sandwich

By combining brown sugar, vinegar, oil, cucumber, salt, and pepper make fast pickles; they give an additional zing to the sandwich.

FIXINGS

1 pound boneless pork loin
1/2 teaspoon red pepper cayenne
Kosher pepper and salt
1 cucumber, thinly sliced
3 tablespoons cider vinegar
2 tablespoons olive oil
2 teaspoons sugar that is brown
1/3 cup mayo
4 Portuguese rolls, divide

DIRECTIONS

Warm oven to 450° F. Season the pork with the cayenne pepper and ¼ teaspoon salt. Roast on a rimmed baking sheet until an instant-read thermometer inserted in the middle reaches deg 145&; 20 to 25 minutes, F; thinly piece.

In the mean time, join the cucumber, vinegar, oil, brown sugar, and ¼ teaspoon each salt and pepper in a medium bowl.

Break Up the mayo, pork, and cucumber among the rolls.
